
Sweet Potato Almond Puree

Ingredients
1 handful of blueberries (fresh or frozen)
2 large sweet potatoes
3 tbsp almond butter
1/4 cup milk of choice (coconut or almond milk)
1/8 tsp cinnamon
1/8 tsp nutmeg
1 handful of shredded coconut
1/8 cup sweetener (honey or agave syrup)
Directions
1. Boil pot of water
2. Wash + peel + chop sweet potatoes
3. Cook sweet potato in boiling water at high heat (covered for 10 min)
4. Drain water
5. Puree sweet potatoes (mash in pot or blend in blender)
6. Mix in almond butter + milk of choice + cinnamon + nutmeg + sweetener
7. Serve in bowls topped with shredded coconut + blueberries
