
Garden Omelette
Prep Time = 5 min + Cook Time = 4 min

Ingredients
1 handful veggies of choice (kale, baby tomato, mushroom, and onion)
2-3 eggs
1 tsp butter
pinch salt
pinch pepper
Optional Toppings
dash hot sauce of choice (Tapatio)
1/2 avocado
Directions
1. Melt 1/2 tsp of butter on non-stick pan on medium heat
2. Chop veggies, add to non-stick pan (cook for 2 min)
3. Whisk eggs in a separate bowl
4. When veggies are cooked add the remaining 1/2 tsp of butter and spread throughout the non-stick pan
5. Add whisked eggs to non-stick pan and spread throughout
6. Sprinkle salt and pepper
7. When sides of omelette are fluffy, fold in half (cook for 1 min)
8. Flip (cook for 1 min)
9. Ready to serve with optional toppings spread on top
